Tokaji

Tokaji (not to be confused with imitations with such names as Tokay or Tokai) is one of the great dessert wines of the world. It ranges in sweetness from the extraordinary Aszu Eszencia (often compared to fine aged Sauternes) to the dry Furmint. Many great figures in history loved this wine; Louis XV is supposed to have exclaimed to Madame de Pompadour, “This is the king of wines, and the wine of kings!” Maria Theresia (Queen of Hungary as well as Archduchess of Austria and Queen of Bohemia) was its greatest promoter. She once sent some of the golden elixir to Pope Benedict XIV, who wrote back these words of thanks: “Blessed be the land that produced you; blessed be the woman that sent you; blessed am 1 that drink you.” Maria Theresia’s pet parrots also benefited from the wine’s qualities: She fed them wine-soaked cake crumbs, which she was convinced kept their feathers bright and glossy.
